Gluten-Free Greek Mixed Vegetable Salad Recipe

This is a very fresh-tasting, gluten-free salad with lots of crunch. Like many Greek recipes, this dish includes yogurt and dill for flavoring.
1 cup cauliflower, cut into bite-size pieces
1/2 cup green bell pepper, diced
1 cup raw mushrooms, sliced
1 cup Kalamata olives (no pits), sliced
1/2 cup plain, gluten-free, yogurt
2 Tbs olive oil
1 Tbs apple cider vinegar
1 Tbs lemon juice
1 Tbs dried dill weed
1 clove garlic, finely chopped
Salt & black pepper
Toss together the cauliflower, green pepper, mushrooms and olives lightly in a bowl. Whisk together the remaining ingredients; add salt and pepper to taste. Pour over the vegetables and serve.
