Gluten-Free Gazpacho Recipe

Gazpacho is a cold, Spanish vegetable soup which originated in the southern area of Andalusia. Typically, it contains bread for thickening, but this is omitted in this gluten-free version. The results are just as tangy and delicious!
1 cup finely chopped celery
1 cucumber, peeled and finely chopped
1 green bell pepper, finely chopped
1/2 cup finely chopped spring onion
3 large tomatoes, peeled and finely chopped
2 avocados, diced
4 cups tomato juice
5 Tbs red wine vinegar
4 Tbs olive oil
Salt & pepper
Mix all the ingredients together in a large non-metallic bowl and place in the refrigerator to chill overnight.
