Gluten-Free Flourless Chocolate Cake Recipe

Almost everyone loves chocolate cake! This gluten-free recipe contains no flour and the cake takes only about 45 minutes to make. It is delicious served with a scoop of ice cream, sorbet or fresh berries.
4 oz bittersweet chocolate, gluten-free
1/2 cup butter, unsalted, cut in pieces
3/4 cup sugar
3 large eggs
1/2 cup unsweetened cocoa powder, gluten-free
Confectioners’ or powdered sugar, gluten-free, for dusting
Preheat the oven to 375 degrees F.
Butter an 8-inch round baking pan; line the bottom with a round of wax paper and butter the paper. Cut the chocolate into pieces. In a double boiler or a small saucepan set over a larger pan of simmering water, add the chocolate and butter; stir until melted and smooth. Remove the top pan from the double boiler and whisk in the sugar. Add the eggs and whisk well. Sift the cocoa powder onto the chocolate batter and whisk in. Pour the mixture into the baking pan; bake on the middle shelf of the oven for 25 minutes or until there is a crust on top. Leave the pan to cool on a rack for 5 minutes. Carefully run a knife around the outside edge of the cake and invert onto a serving plate. Dust the cake with confectioners’ sugar (a fine sieve works well).

What all purpose gluten free flour does not have that odd/unique flavor? I find it to taste bad and have ruined many recipes.
