Gluten-Free Lamb Chops with Feta Cheese Recipe

Lamb chops can be a nice alternative to grilled steaks. Feta is a Greek cheese traditionally made from sheep and/or goats’ milk. It is white in color with a crumbly texture and has a tangy, salty flavor. (Feta made from cow’s milk, available in most supermarkets, will also work). This Greek-style recipe is gluten-free and really easy to make. Serve with cooked rice and a side of vegetables or a salad.
4 loin lamb chops
Dried oregano
Salt & pepper
2 cloves garlic, peeled, cut into slivers
Juice of 1 lemon
4 1/2 Tbs melted butter
1/2 lb feta cheese, cut into 4 squares
Preheat oven to 375 degrees F.
Season the lamb chops with oregano, salt (not too much because the cheese can be salty!) and pepper. Cut slits in the meat and insert slivers of garlic. Mix the lemon juice with the melted butter and pour over the chops. Place each chop on a piece of aluminum foil (big enough to fold over and seal). Place one square of feta cheese on top of each chop. Fold and seal the aluminum foil to prevent the juices escaping. Place the packets in a roasting pan and bake on a middle shelf of the oven for 2 hours. To serve, open each packet and remove the cooked chop to an individual plate and pour over the juices.
